This is my go-to recipe for a delicious, nutritious salad that you can keep in the fridge and eat all week. I’ve added a little bit of freshness to the traditional Russian salad and made it feel more rustic and like a meal.
I’m not sure if I’ve ever made a salad before. I’ve always just made soup or chili or pasta. But when I go to work every day, I make salads. In fact, I’m really into salad right now.

If you really want to make a salad, it could be easier to just pick a few more basic ingredients and mix them in at the end. Of course, we all know that there are plenty of people who have a better recipe for salad than the ones below and have no desire to share it with us.
The problem with the simpler recipes is that it’s far easier to forget to add the olive oil and vinegar at the end and end up with the same basic salad. It’s a shame, because the salad really is one of the easiest meals to make, and it can be a great way to use up leftovers or freeze them for later. The trick is to use the right tools for the job, such as a food processor, butter-stick, or cheese grater.
In Russia, the summer is always the time for salad. And when you say salad, you don’t mean a salad made out of the leaves of romaine or kale. You should always use a salad of potatoes. And when it comes to salad, it’s important to keep things in a bowl or plate to keep things evenly distributed. But even then, you can always throw some whole wheat into your salad and make it look more like a meal than a simple bowl.
You can use a bunch of different ingredients to make a salad look interesting, but for me it’s always the cucumber and red onion that makes it look so good. And by that I mean that cucumber and red onion need to be tossed through a bunch of other ingredients in order to even up the flavor.
