This mushroom soup is one of my absolute favorites. It is so bright and flavorful and the chunks of mushroom are so tender. It is one of my go-to soups for the whole week.

The mushrooms are one of the main ingredients in the soup, but there are plenty of other ingredients as well. There are potatoes, onions, and carrots, but there are also corn, beans, and peas as well. The soup is always served with bread (the only type of bread that contains fungus), and it’s always served with saltimbocca.
