This recipe is adapted from a recipe found in Healthy Vegetarians Recipes for the First Time Cookbook by Kathy Leibowitz. I have adapted it to meet the needs of a person that is a lean, mean, mean brisket. To that end I used 2 pounds of brisket on a rotisserie for a very hot cook. I also doubled the meat and added about 3 Tbsp. of water for each pound of meat.
I think the secret to making lean brisket is to cut it in small chunks. It helps to cook it medium-rare for a long time. The idea is to get it well-done. Then, when you’re done, just shred it.
