Vegetables are a great source of protein, iron, and calcium. They also contain vitamins A, C, and K. Vegetables are also a great source of fiber and fiber is often referred to as “good” for our gut, too. Fiber helps our digestive tract and helps keep the gut healthy. It helps to keep you regular and can even help with bowel movements.

If your diet is poor, I’ve found that vegetable soup can actually help it. Just take a little of the veggies and add some broth, stir, and you’re good to go.

Take a big bowl of vegetable stock (or vegetable broth) and mix it with a bunch of onions, garlic, carrots, celery, zucchini, and some herbs (you can add a little parsley or cilantro if you like). You probably want to use a soup stockpot if you don’t have one already.

You want to put the soup into the pot to cook, and then take the soup off the heat. Add the soup to the pot and bring the soup to a boil. Add the potatoes, carrots, and celery and then the herbs. Once the vegetables are soft, add in the broth. Once the soup is boiling, add in the cheese and then cook for a few minutes more.
