This is a recipe that I love and I’ve been making for the past few months. It’s a summer favorite and I like to make it whenever I’m in the mood for something hearty. It’s not very complicated, but it’s worth a try because it’s a little bit of a challenge.

I have to say, Ive been making this soup for years but I never really had the time to perfect it. I was always way behind on it and then I started making it more often because I was so hungry. This soup is so rich and creamy that you cant even tell it is tomato based. So it tastes just like any other tomato soup. I made a few different varieties of this recipe and they all were absolutely delicious whether they were made with red or green peppers.

Its as good as any other tomato soup, but like all good soups, you can always add more vegetables. When I make this soup I use red peppers because I can.

My biggest recommendation for this soup would be to use a combination of red and green peppers.

Next, we add about a 1/4 cup of shredded mozzarella. Then we pour that into a big bowl and add about a 1/2 cup of chopped green onions.
