Chicken Giambotta is the Italian version of my own recipe, Giambotta, which means “little chicken”. It is a recipe for the most delicious, chicken gizzard pasta that is filled with sauteed chicken, tomatoes, onions and cheese. We like to serve it with a simple pasta sauce, and it has been a regular part of the menu at our restaurant the Last Supper.

Chicken giambotta is actually one of those dishes I’ve made before that is better than the original because it’s more of a meal in itself. But what makes it even better is that instead of making it look like a meal by putting bread and butter on it, the original dish was made by putting bread in the center without any butter. I think that’s where the similarity to my other recipe ends.

The original dish (which I made the day before as I was having dinner with friends) was stuffed with a combination of chicken and mushrooms in a cream sauce. I got inspiration from the original dish and decided to add chicken giambotta to the original dish and it worked.
