I love this recipe because it brings the familiar flavors of my favorite breakfast food to the table and makes them look and taste like they belong together. These pancakes are a great way to use up leftover spinach, and I especially love the way they look and taste like a little bit of the Italian flavorings used to make it. This recipe can be made with cooked spinach, but if you are short on time, you can also use the uncooked spinach.
